I don’t know about you, but I love anything that makes my life easier. Frozen foods is no different. I love when we can get our hands on fresh fruits and veggies. However, depending on the time of year or if I just can’t make it to the store (sometimes it’s hard with 6 little ones!) then I like to have a good stock of frozen options in the freezer! Today’s recipe for an easy mixed berry compote is made with frozen fruits. So it’s easy to make anytime of year and you can guarantee you have the ingredients on hand for a delicious topping for anything from yogurt to pancakes! This post is sponsored by Smart & Final. Our family likes to have big breakfasts on Sundays. When I spotted the big box of 188 count First Street Buttermilk Mini Pancakes and the 3 pound bag of the frozen First Street Berry Medley I knew they would be the perfect combination! Not only could we have a filling and delicious breakfast, but making it and clean up would be a breeze! I decided to make an easy mixed berry compote to go with our pancakes. Easy Mixed Berry Compote

This delicious compote is easy to make anytime of year because it uses frozen fruit. Great on top of ice cream, yogurt, pancakes, and more!

Ingredients
  • 4 cups Frozen Mixed Berries, Berry Medley
  • 2 tbsp honey
  • 1 tsp vanilla extract
Instructions
  1. Cook 4 cups of frozen berries and 2 tbsp of honey over medium heat until fully heated. Mash with stirring spoon or potato masher near the end once it's cooked.

  2. Turn down heat and continue cooking until liquid has reduced by half. Stir in vanilla and take off heat.
