These pancakes are the perfect thing for your fall breakfast or brunch menu. We’ll call them semi-homemade, because they use a pancake mix base that we’re hacking. The result is delicious and easy pumpkin pancakes that your whole family will love. Plus, you can feel good about serving them up because pumpkins are actually really good for you! Pumpkins are rich antioxidants, including beta carotene, an antioxidant that your body turns into vitamin A. They also are high in potassium, and contain vitamin C and fiber. Easy Pumpkin Pancakes

These pumpkin pancakes are perfect for fall and easy to make.

Ingredients
Dry Ingredients
  • 2 cups dry pancake mix
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp ginger
  • ¼ tsp nutmeg
Wet Ingredients
  • 1 ½ cups milk
  • 1 cup pumpkin puree , not pumpkin pie
Instructions
  1. Combine dry ingredients together in a large mixing bowl. Mix in wet ingredients until well incorporated.

  2. (Spices can be doubled to preference.)

  3. Spoon batter onto hot, buttered griddle. Flip over to cook on both sides.
