Fall is officially less than two weeks away, can you believe it?! Honestly, I can’t. I don’t know about you but I’m still hanging onto Summer and getting in all the pool days I can… but I’m also slowly embracing Fall. After all, I do love the crisp Fall mornings, pumpkin patch outings, and the delicious Autumnal treats. Speaking of Autumnal treats, these chocolate pumpkin cookies only have three ingredients and you’ll be able to sneak your kids some veggies! Total mom win! Want to see how to make them? A couple weeks ago on my InstaStories I teamed up with some friends to share some of our favorite (simple) desserts. Of course, with Fall coming up a lot of us leaned towards something festive for the season. I decided to make these chocolate pumpkin cookies as a variation on my double chip pumpkin cookies and they are definitely a new family favorite.

If you have kiddos that aren’t thrilled with pumpkin then don’t worry–the chocolate cake mix totally outweighs the can of pureed pumpkin and the pumpkin flavor is very subtle. You could always amp up the pumpkin flavor with a drop or two of pumpkin spice extract though. Or even add some pumpkin spice baking chips! Extra bonus is that you can eat the cookie dough without feeling guilty because there’s NO raw egg! Score!

These cookies are best eaten same day because they just get more and more soft the longer they sit. Not that that’s a problem–if they stick together than it’s perfectly acceptable to eat the whole mass. Trust me.

Ingredients
  • 1 box Chocolate Cake Mix
  • 15 oz. Can of Pureed Pumpkin
  • 1 cup Chocolate Chips
Instructions
  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper. 

  2. Mix all ingredients (do not add the ingredients listed on the box of cake mix) and place rounded tablespoons on the cookie sheet.

  3. Bake for 12-15 minutes.
