Happy May first! This is a crazy birthday time for us–yesterday was my husband’s birthday and in two weeks we’ll have two more to celebrate. Which means that next year we’ll have four birthdays all within one month of each other! To celebrate I wanted to share some delicious birthday cake s’mores with you today. Just in time for Summer, bonfire, and s’mores season! Does your family love s’mores in the Summertime? I admit–we love them all year long. Though s’mores are synonymous with warm Summer evenings we also enjoy them with bonfires in the Fall and all year long in the microwave!

We actually made these tasty little morsels last Summer when were were glamping at Tower Park Resort. For our family s’mores are a must while camping. When we’re glamping it’s a little easier to enjoy fancy s’mores and I always try to bring something special for a s’mores bar. Having a variety of marshmallow and chocolate flavors always makes the s’mores process a little more special. I like to pick up some gourmet marshmallows for the occasion–plus these are square shaped and fit on the s’more really well! A couple different types of chocolate bars are a tasty choice too, although my kiddos like the classic bars best.
Fair warning–these birthday cake s’mores are extremely sweet. And that’s really saying something coming from me! Usually with s’mores I can just keep eating them, but with these massive beasts I’m good with just one. I don’t know, maybe that a good thing, wink wink. Make sure when you assemble them you turn the top cookie upside down so that the frosting for both cookies is on the inside.
