We have been having plenty of cold and stormy weather lately and I am loving it! This kind of weather always makes me want to stay at home with a crackling fire and some comfort food for family dinner. One wintery weather meal our whole family loves is chili. Some chili with broccoli and cornbread–what’s better?! This easy chicken chili recipe is a favorite for our family and I hope you’ll love it too!
what makes this an easy chicken chili recipe?
Making chili used to really intimidate me. I mean, soaking and simmering beans all day long? Who has time for that? I certainly don’t. But this chicken chili recipe? Super simple. For real. Don’t be scared off by the somewhat long list of ingredients, the one-step cooking instructions make up for it!

My friend Tiffany shared this recipe with me several years ago. Since then it has become my go-to, fail-safe chili recipe. She got it from her sister, so I guess it technically should be called “Tiff’s Sister Tami’s Chicken Chili”… but that just seems a little long, doesn’t it? I love it because it’s really easy to throw together, it’s so versatile, and most importantly it tastes good!

This recipe is low prep with high rewards. Just about everything can come from a can, so you can keep all the ingredients on hand! You also have a lot of options with ingredients. For example, it calls for a can of corn, but you can also use frozen corn. It also calls for canned chicken, but we’ve also used leftover rotisserie chicken and even turkey at Thanksgiving!
does this recipe work as a freezer meal?
One of the things I like best about this recipe is that it works great as a freezer meal. I usually double the recipe when I make it. That way, I have enough chicken chili for our family for dinner, plus a freezer meal.

Just let it cool completely and then spoon into gallon sized Ziploc bags. Then when I want to reheat I just thaw overnight in the refrigerator and reheat on the stove top or slow cooker. That’s another great aspect of this recipe. Depending on how busy your day is you can quickly heat this on the stovetop, or let it simmer all day in the slow cooker!
This easy chicken chili recipe is perfect to make for dinner or freeze for later! Don't be alarmed by the long ingredient list–this recipe really couldn't be simpler to make!
- 1 can kidney beans
- 1 can Ranch Style Beans (26 oz. can)
- 2 cups cooked and shredded chicken breasts (OR 2 cans of chicken breast chunks)
- 1 medium onion (chopped and sauteed)
- 1 green pepper (chopped and sauteed)
- ½ bag frozen corn (OR 1 can of corn, drained)
- 2 cans Cream of Chicken soup
- 1 can diced tomatoes, with juice (28 oz. can)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp chili powder

Combine all ingredients in large pot on stovetop or slow cooker on counter and heat thoroughly.

If you are making extra for freezing when you're making dinner, just ensure you let it cool completely, then fill gallon sized Ziploc bags and lay flat in freezer.

If you are just making chili to freeze for later then ingredients can just be combined without heating first.
