Thanksgiving is right around the corner–literally–and that means it’s pie season. Do you ever wonder how certain foods and flavors become associated with different holidays? Why is pie the popular dessert for Thanksgiving? I don’t know, but I’m not mad about it. These mini mason jar pies are sure to be a hit with family and friends. And don’t be scared! They’re really not hard to make.

I came across some adorable single serving pies in half pint jars. Of course I really wanted to try making them. Let’s face it, anything in a mason jar is automatically better, right?

I ended up making little apple pies, pumpkin pies, and yellow cakes with chocolate frosting. I gave most of them away to several ladies that I wanted to show my gratitude towards. However, there were enough left over for Mike and I to both try all three kinds. I think they all turned out great! The mini apple pie might have been my favorite.

I made these single serving mason jar pies the day before I handed them out. To get a good seal, just twist the lid down tight while the pies are still hot. If you do this they actually will seal down tightly, just like when you do canning!

I could hear all the lids popping in the kitchen if you’ve ever canned then you know what I mean). They’re obviously not going to be shelf-stable as long as something that’s actually canned. However, I can speak from experience that they’re at least good for several days out of refrigeration.

If you’re also making mini cakes like I did, you will have to wait for them to cool so you can frost them, then screw the lids on. Don’t worry though, they’ll still be fresh after a day or two. The great thing about that is that if you’re in charge of bringing dessert to Thanksgiving dinner this year, these would be easy to make ahead of time. That way you can be a little more relaxed in the days leading up to the meal!

Simple Pie Crust

This simple pie crust is the perfect foundation for your favorite pie!

Ingredients
  • cups all purpose flour
  • ½ cup cold, unsalted butter (cubed)
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • 3-4 tbsp ice water
Instructions
  1. Mix ingredients in a food processer with a dough blade attached until mixture forms a ball as it is being mixed. Do not overmix and don't handle the dough too much. This is one of the tricks to great pie dough!

  2. Ideally, wrap your ball of dough in plastic wrap and refrigerate until firm, about 1 hour (and up to a few days). Then rollout with a rolling pin and fold into your pie tin.

  3. Follow baking instructions for your pie recipe. This crust recipe can be blind baked or not.
