Cinco do Mayo is one week away and I am all for any excuse for a party and yummy food! This year I thought I would switch things up and plan a fun Cinco de Mayo brunch complete with churro waffles. Because, why not? I also have a fun printable placemat for your kids to color on, just like in their favorite restaurant!

Why not host a brunch for Cinco de Mayo, or plan a breakfast for dinner? Now that the weather is warming up it’s a great time to get together with friends outdoors and Cinco de Mayo gives us the perfect excuse. Make some traditional huevos rancheros or chilaquiles to go along with these churro waffles so you can get a little savory with your sweet. Of course the perfect beverage would be horchata or agua frescas–one of my favorite versions is pineapple!

When you set your table for brunch you can use these free Cinco de Mayo placemat coloring sheets I created. Do your kids love coloring at restaurants? Mine do so this is a fun activity to do at home for us. They also love to play tic-tac-toe on them so I had to include some grids to play that. I also included a short paragraph about the history of Cinco de Mayo, so your kids can know what the day is about!

These churro waffles are so yummy and fun for a special brunch. They’d be good for Mother’s Day too! Just sayin’. Top these with syrup or spread on some chocolate hazelnut spread for an extra decadent treat. Basically you’re eating dessert for breakfast. But it’s okay because they’re called waffles so don’t worry, no one will judge you.

Churro Waffles

Make these simple churro waffles for a fun and delicious Cinco de Mayo brunch!

Ingredients
  • 1 ½ cup flour
  • 5 tsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla
  • 1 cup milk
  • cinnamon sugar for sprinkling on top [¼ cup sugar & 1 tbsp cinnamon]
Instructions
  1. Sift together dry ingredients in a medium bowl. Whisk wet ingredients in a separate bowl. Add wet ingredients to dry and mix together until incorporated.

  2. Grease your waffle maker and pour batter into the center. Cook until golden brown.

  3. Remove from waffle maker and sprinkle with cinnamon sugar while still warm.
