Earlier this week I shared I super simple recipe on my Instagram Stories for farmers market sheet pan fajitas. Not only is this a great recipe because it comes together so quickly, but it’s a great way to use a lot of vegetables. Whether you are enjoying the harvest from your own garden, the farmers market, or simply clearing out your fridge, this is the perfect recipe to work into your weekly menu rotation!

what are sheet pan fajitas?

If you’re not familiar, sheet pan fajitas area super simple way to enjoy fajitas! The clean up is minimal because you’re only using one pan for everything. Once your protein and veggies are cut you place them in the pan and that’s where you do all your mixing with the spices and garlic. Then you bake it all together in the oven on your pan–hence the name sheet pan fajitas! This recipe is only differs from others because I say the more veggies the merrier!

what vegetables should I use?

I got asked this question several times when I shared the recipe on Instagram. My answer is pretty much any! I do love using onions and bell peppers you’ll find in traditional fajitas. But zucchini is another favorite veggie to use (and I know if you grow it you probably have tons). Tomatoes are good too, and even sun-dried tomatoes if you have some! Consider shucking your fresh corn on the cob and enjoying some kernels in your farmers market sheet pan fajitas.

This easy, one dish meal is a great way to incorporate lots of veggies into your family's dinner!

Ingredients
  • 3-4 boneless, skinless chicken breast cut into thin strips (other protein can be used)
  • 5-6 vegetables of choice (onions, peppers, zucchini, carrots, etc.) cut into strips (peeled as needed)
  • 2 tsp minced garlic
  • 3 tsp taco or fajita seasoning
  • 3-4 tbsp EVOO for drizzling
  • 1 small lime cut in wedges
Instructions
  1. Preheat oven to 400° and spray sheet pan.

  2. Prepare protein and veggies by cutting into thin strips. Add to sheet pan.

  3. Add garlic and sprinkle seasoning on top. Drizzle EVOO over everything and mix together in the pan.

  4. Cook for approximately 30 minutes, tossing/mixing halfway through. Wrap tortillas in foil and place on pan for last 5-10 minutes of cooking to heat through.

  5. Cut small lime and squeeze juice of sheet pan fajitas. Enjoy!

This is the perfect recipe to get your kids helping in the kitchen with you! If you have older kids they can help cut the protein and the veggies. Kids of any age will love adding the spices and garlic to the pan. And anyone who isn’t too squeamish about touching raw meat can help mix it all together! It’s also been my experience that if they’ve helped grow them or helped make them then reluctant children are more willing to try new vegetables! Even my kids that don’t love all the veggies in this meal love the meat.
