Happy birthday to Disneyland who (which??) turns 64 years old today! There have been so many changes over the years but the magic is just as strong as ever! To celebrate I wanted to share these super simple Mickey shaped cookies. They’re easy to make and super scrumptious. So if you can’t make it to the parks for the big day sprinkle a little pixie dust in your own kitchen with these chocolate-dipped Mickey cookies.

It’s no secret that I will look for any reason to eat something yummy. Well, any celebration is made better with some delicious treats, right? I loved making these goodies for Disneyland’s birthday. These chocolate-dipped cookies are both simple to make and so scrumptiously delicious it’s hard to stop at just one!
Ingredients for Mickey cookies:
- Cream sandwich cookies such as OREOs–both regular and mini size.
- Chocolate chips of choice–I prefer a mixture of milk and semi-sweet chocolate chips.
Start by laying the cream sandwiches on parchment paper in Mickey designs. Drizzle your melted chocolate on top covering the entire surface with chocolate and concentrating on where the cookies are connected. Then wait for the chocolate to harden. Don’t worry about getting a smooth, even layer because you can take care of that with the next chocolate layer.
Once your initial layer of chocolate is hard you can dip your entire creation in a second layer of melted chocolate. Wait for them to harden completely and then you can enjoy your simple and delicious chocolate-dipped Mickey cookies! It might be hard to wait for the chocolate to set up completely but try not to use the refrigerator to harden it quicker as it will make the chocolate spotty.
Try changing these yummy chocolate-dipped cookies up with different flavored cream sandwich cookies, like mint or peanut butter!
