You know I’ve been trying to eat a little better and be healthier. Having five babies in eight years can take its toll on your body. And honestly, I can’t really blame my cute kiddos. I’ve been putting myself last for far too long. Mealtime is something that I often struggle with. Making the time for myself and being able to easily make a yummy lunch that’s also good for you? be flexible with mealtime

I think a lot of us have a set time that we classify as “breakfast”, “lunch”, or “dinner”. However, those times might not always work with our time allotted. I look forward to my lunchtime as the one quiet meal I usually get a day! So to make sure that it happens sometimes that means it takes place at 11:00, or sometimes at 2:00. I fit it in around naps and homeschool and that’s what works for me. I’ve noticed that since I’ve made that quiet eating time something I look forward to I’m more likely to make sure it happens. I’m also less likely to skip an entree for lunch and scarf down my kid’s leftover pb&j instead.
