The mornings and evenings have been nice and cool here. In fact, dare I even say, down-right cold and fallish? What? Fallish is totally a word. So that means that my mugs have been coming out of hiding for morning cups of hot chocolate and late night sweet treats, like mug cake. This chocolate pumpkin mug cake is delicious and tastes like fall in a cup. Best of all? You’re only five minutes away from some cakey goodness. This post is part of a collaboration with 222 Fifth. If you caught my Strawberry Overnight French Toast recipe last week then you read about my new plates from 222 Fifth that I just love. The mugs that came in the dish set are perfect for making mug cakes since they’re microwave safe. Plus, cleanup afterwards is a breeze because use you can just throw them in the dishwasher! Well, don’t literally throw them, but you know what I mean.

Chocolate Pumpkin Mug Cake

This particular recipe combines one of my all-time favorite flavors (chocolate) with everyone’s favorite taste of fall (pumpkin). And it’s only three ingredients. So, grab your own favorite mug and make some chocolate pumpkin mug cakes! I love to enjoy mine cuddled up on the couch after the kids have gone to bed, it’s like a little mini vacation for busy moms.

Chocolate Pumpkin Mug Cake

Ingredients
  • 1 box of brownie mix
  • 1 can of pureed pumpkin
  • 2 eggs
Instructions
  1. Grease the sides and bottoms of two mugs.
  2. Mix all ingredients together in a bowl until well incorporated.
  3. Fill each mug halfway with brownie batter.
  4. Put both mugs into the microwave and cook on 50% power for two minutes. Then, cook for three more minutes at full power. Once they are done cooking, leave them in the microwave for five minutes.
  5. Enjoy!
Recipe Notes

This will make about 6-8 mug cakes but I recommend only cooking two at once.
Cooking times may vary based on microwave wattage.
The rest of the batter can be kept in the fridge for a couple days.
