Sometimes it’s fun to switch things up a little bit. Especially with kids, you know? I have found that even the pickiest of eaters can be enticed to try new things when they’re presented in a fun or different way. So is the case with these easy summer salad skewers.

I feel very lucky that my children love salad, I know lots of kids that don’t. Also, weird fact, we don’t really buy Ranch dressing so my children actually enjoy Caesar or Italian dressings. Well, really they seem to enjoy whatever type of dressing we’re having. I have some friends that are SHOCKED to find out my kids don’t need to douse their veggies in Ranch dressing to consume them.

Summer Salad Skewers

Anyway, you can make salad skewers in any variety of salad that you’d like. You could also call them salad kabobs, or even salad pops, as my four-year-old calls them. I’ve also made Caesar skewers with Romaine, grape tomatoes, large flakes of Parmesan cheese, and croutons. Any type of salad combo is good–it’s just salad on a stick! Salad to go!

I think these summer salad skewers with fresh fruit are perfect for the warm summer months though! Romaine lettuce, blueberries, strawberries (there are only a couple, but they’re from our own garden, so that’s exciting!), and then crumbled goat cheese on top and drizzled with white balsamic dressing make this a wonderful, light side for any meal. And so fun for kids to eat too!
