A classic cookie gets a marmalade twist that's not too sweet.

Ingredients
1cupsoftened butter
1/2 cupbrown sugar
1egg
3/4 tspsalt
1tspvanilla
2 1/4cupflour
granulated sugar
orange marmalade
Instructions
Using a stand mixer, cream together butter and brown sugar. Butter should be soft and room temperature, not melted.
Beat in everything except for flour. Once ingredients are well-incorporated than slowly add in flour on "stir" setting until mixed and dough begins to form a ball.
Roll into small balls, about 1 inch in size. Roll in granulated sugar, then place on cookie sheet and press down in the middle of the ball with your thumb causing an indentation.
Bake at 400 degrees for 5-7 minutes. They should NOT be brown when you remove them from the oven. Once the cookies are cooled, spoon a small amount of marmalade into the center of each cookie.
