It is officially the first day of Spring and I am pretty excited about it, cue the fluffy animals and all things floral. And carrot cake, I can’t say no to carrot cake and Spring is the perfect season for it. Why not combine the fluffy woodland creatures and your love of carrot cake with these cute bunny borough cakes and let your stomach say hello to Spring in proper fashion? Another month means another excuse to head to Target with $10 in hand (well, my card and a $10 budget) to participate in the $10 at Target Challenge that is hosted by Stephanie, Beth, Becky, Elizabeth, and Tif. When I set out I didn’t necessarily have an objective in mind, I figured I’d see what I could find in the Dollar Spot (aka- magic central) and take it from there. When I found a pretty little pink dessert stand (which I actually showed off already in this post since I tend to get my shopping trips done early before all the good stuff is taken) I knew it was meant to be–after all, I had recently had two of my dessert stands break so obviously I needed a new one, right?!

Once I had that little treasure tucked into my cart it seemed only fitting to make something to show off on it. All of the Easter candy was calling my name (even though it seemed extremely early for Easter candy to be within calling distance) but instead of buying some to snack on I decided to buy some for my $10 Dollar Challenge! I remembered that I had purchased a mini bundt pan awhile ago that I still hadn’t had a chance to use and an idea was born. I grabbed some marshmallow bunnies and powdered sugar, and with a grand total of $8.96  (under budget again!) I was ready to make my sweet Easter treat.

These bunny borough cakes are such a cinch to make and so fun for your kids (or you, just being honest) to eat, all you have to do is make your cakes with any of your favorite homemade or store-bought cake mixes (but carrot cake does seem the most fitting for a bunny burrow, don’t you think?). If you don’t have a mini bundt pan you could also make cupcakes and cut out a small indentation in the middle for your little marshmallow bunny to sit in.

The next step is to pipe some green grass around the rim of your rabbit hole (I used cream cheese frosting because carrot cake has to have cream cheese frosting, yum) and then place your marshmallow bunny in the middle to appear as if he’s peeping out of his borough. I also sprinkled some carrot cake crumbs around like dirt clods. But tastier.
