The mornings and evenings have been nice and cool here, dare I even say, down-right cold and Fall-like? So that means that my mugs have been coming out of hiding for morning cups of hot chocolate and late night sweet treats, like mug cake.

I love making mug cakes because you’re always only a few minutes away from some delicious goodness in a cup. This particular recipe combines one of my all-time favorite flavors (chocolate) with everyone’s favorite taste of Fall (pumpkin). Even better news? It only takes three ingredients.

These great mugs are perfect for making mug cakes since they’re microwave safe. Plus, cleanup afterwards is a breeze because use you can just throw them in the dishwasher!

Well, don’t literally throw them, but you know what I mean.

Seriously though, 222 Fifth is fine quality china and they have some of the most beautiful patterns, like this Evangeline pattern that I have; but I also love the Gabrielle Blue set and the Clipper Blue set, just to name a few.  And doesn’t this Eliza Plum set just look perfect for Fall??

Chocolate Pumpkin Mug Cake

So, grab your own favorite mug and make some chocolate pumpkin mug cakes! I love to enjoy mine cuddled up on the couch after the kids have gone to bed, it’s like a little mini vacation for busy moms.

Ingredients
  • 1 box of brownie mix
  • 1 can of pureed pumpkin
  • 2 eggs
Instructions
  1. Grease the sides and bottoms of two mugs.
  2. Mix all ingredients together in a bowl until well incorporated.
  3. Fill each mug halfway with brownie batter.
  4. Put both mugs into the microwave and cook on 50% power for two minutes. Then, cook for three more minutes at full power. Once they are done cooking, leave them in the microwave for five minutes.
  5. Enjoy!
Recipe Notes

This will make about 6-8 mug cakes but I recommend only cooking two at once.
Cooking times may vary based on microwave wattage.
The rest of the batter can be kept in the fridge for a couple days.
