I am so excited for today’s post! There is just something so fun about bright and bold neon colors and I can’t wait to see what you all have come up with. I’m also excited because I am sharing a recipe today and I know those have been few and fair between lately. Y’all–it’s even a recipe for a baked good. I know, I know, shocking. In my defense, it’s been so darn hot this summer and our kitchen is always the hottest room in our house, and that’s before I even turn the oven on. But this lemon lime cake is the perfect dessert for the hot Summertime!

I actually had about three different ideas for a sweet neon treat and I was planning to share all three, but then I realized not only would I likely not have time to pull that off, but my low-carb wishes would quickly succumb if I had too many goodies in the house. Le sigh. In fact, I took two bites after these picture were taken and then had to take it over to my parent’s house. The life of a blogger is strange at times.

The neon lemon-lime cake I chose to share with you today is not only the perfect light and slightly tangy dessert, but it is also a poke cake–meaning that it’s very simple to whip up and incredibly moist. How simple, you ask? It takes just five ingredients. Well, six if you count the water, but I’m going to assume everyone reading this has water in their kitchen.

Ingredients
  • 1 box of lemon cake mix
  • 12 oz. lemon lime soda (I used diet because that's all we have in our house.)
  • 1 large box of lemon lime jello (I used sugar free.)
Topping
  • 8 oz. whipped topping
  • 16 oz. lemon frosting
Instructions
  1. Mix together cake mix with lemon lime soda. DO NOT add other ingredients the box calls for. Bake according to package directions.
  2. After cake has baked and while it is still hot poke holes in the surface with something like the end of a wooden spoon. Allow cake to cool.

  3. Mix up jello according to package directions and pour liquid over the entire cake before it sets up. Use all of the liquid. Place in refrigerator to cool.
  4. When cake is cooled and ready to frost, mix up whipped topping and lemon frosting until well incorporated. If desired, add food coloring for a more intense color. Smooth topping over the entire surface of the cake.
