Happy St. Patrick’s Day friends! I’m excited that it’s time for another Year of Color post, and also excited to share this “recipe” for an easy leprechaun snack mix with you! Do you guys do the whole mischievous leprechaun thing at your house? We don’t, mainly because I have enough messes to clean up without creating some myself and then letting a leprechaun take credit for it.

But, that doesn’t mean that I won’t fully embrace any type of treat that I can enjoy in the name of St. Patrick’s Day, leprechauns, or the color green.

This tasty leprechaun snack mix is essentially an adaptation of Muddy Buddies with a little bit of festive mint in place of peanut butter. By the way, can you believe this was the first time that I’ve made Muddy Buddies (well, a variation of them at least)? I never even tried Muddy Buddies until I was 23 when Mike’s sister made some for us and I thought they were the most delicious thing ever. You can imagine how surprised I was when I found out they were actually quite a popular treat! I guess I lived a sheltered life growing up when it comes to sweet snacks…

Just kidding! Oh goodness, I couldn’t even type that with a straight face.

So yes, I never heard of them until I was in my twenties, but I definitely was exposed to many a tasty temptation growing up. Somehow I guess I just missed the Muddy Buddy memo. Say that five times fast.

A tasty adaptation on the classic Muddy Buddies with chocolate and mint flavors.

Ingredients
  • 9 cups Chex mix of choice
  • 1 cup White chocolate chips Replace with 1/2 cup of mint chips and 1/2 cup of white chocolate chips if you prefer a more minty flavor, or use 1 cup of semisweet chocolate chips if you prefer a stronger chocolate flavor.
  • 1/2 cup Chocolate spread Find this next to the peanut butter at your grocery store.
  • 1/4 cup Butter
  • 1 tsp Vanilla extract
  • 1 cup Powdered sugar
  • 1 bag Mint chocolate candies (such as M&Ms)
  • Mint chips for drizzling, melted If you prefer less of a mint flavor you can replace wtih chocolate chips.
Instructions
  1. Pour cereal into a large bowl.

  2. In a separate bowl melt chocolate chips, chocolate spread, and butter uncovered in the microwave for 1 minute on high; stir and microwave longer as needed until mixture can be stirred smooth, about 30 seconds. Add vanilla.

  3. Pour mixture over cereal and mix until evenly coated. Divide and pour into two gallon-sized resealable plastic bags and add powdered sugar. Seal bags and shake until well coated.

  4. Spread on waxed paper to cool and drizzle with melted mint chips. Store in airtight container.
